making any claim that our sauce is healthy would be dumb. Although we can safely say that compared to other popular condiments, hot sauces in general are a healthier alternative. We are always pointing people to take a look at literature that describes the health benefits of capsaicin and hot peppers in general. New research papers are being released constantly and never cease to amaze us. Due to the nature of fermented anything, our hot sauces are salty. Well within tolerance levels, each bottle has about 40mg of salt as seen on our nutritional labels, however, each bottle also contains about 40 to 50 servings. making it a very low level of sodium compared to almost all other condiments available.

I assume I’m supposed to answer no, but I say, of course a sauce can be too hot. Personally, I reach my enjoyment limit at around 200,000 SHU.

Wait it out and don’t go into panic mode. People swear by milk or ice cream…basically something fatty. Since capsaicin piggybacks itself in the oil of the pepper, anything acidic might help, but the best thing to do is simply stay calm and relax until the ride is over. There’s really not much you can do. Just enjoy the ride.

Scoville is a way to measure the heat of a hot pepper. It’s more of a guideline than a rule. Hot Sauce is measured in SHU, or Scoville Heat Units. Our Sauces available for sale range from 5000 SHU to a perfectly uncomfortable 140,000 SHU.

The hottest sauce, to us anyway, is Smoke Show. It’s a super hoy sauce made with 3 of the hottest peppers and 1 Smoked pepper. It’s loaded with Habanero, Caroline Reaper, and Ghost peppers, with smoke Guajillo peppers for a dreamy smokiness to round it all off. It’s absolutely perfect for wings and most other pub style treats. it weighs in at a whopping 400, 000 SHU. So not for the faint of heart, and mostly for seasoned veterans of spice.

The Creative side of Hot Sauce

We rely on flavour and aroma, and then on availability of the peppers. Luckily, we’ve started to grow our own as well as having some of the best pepper farms in Canada that are also loyal to sustainability, organic, and non GMO methods. This flavour gets passed to you. For the most part we use what we think tastes great. So, the majority of our hot sauces will have habanero peppers, Thai chili peppers, and Carolina Reapers. We also used Pablano and caribe peppers, and of course, garlic. The peppers in this list are our usual suspects be a use they have a great balance of heat and flavour.

Fermenting is usually a word that is reserved for alcoholic beverages. In hot sauce, it’s a great way to enhance the natural flavours of all of the ingredients and create a deeper, more layered flavour profile. At the same time fermenting creates a very shelf stable and safe product. The process itself destroys bad bacteria and creates a gut health positive product by making a sauce rich in lactobacillus and probiotics that aid in digestion. Fermentation in this form does not create an alcoholic product. Any alcohol that may actually be created is so miniscule, it’s almost immeasurable.
